What did I have for dinner tonight?

Mixed veggies(carrots, cauliflower, pepper and broccoli) with homemade spaghetti and meatballs, though the sauce came from a can and two jars, yeah I cooked enough for a few days.

Chopped baked chicken
Chopped hard-boiled eggs
Sliced cherry tomatoes
Raw walnuts
Crumbled bacon(made on the stove, not store bought)
Raisins
Crumbled gorgonzola cheese
Lemon juice
Lime juice
Smoked paprika

Sounds delicious. I'd have to substitute pecans for the walnuts, or just
leave them out completely. Would it still be a "Gordon Salad"?

ASAP, this:

Of course I have a small shopping list of ingredients to get, thanks to the local Food Pantry...
What do I lack? That's simple, everything except the margarine, pepper, the elbows, and the money to do so at the moment...

And eventually I might even bake some blue cookies...

One of these days I've got to get a cutting board, My Nephew(who doesn't know how to cook or do KP for that matter) suggested that I cut the quarters up on the countertop, sigh...
That's two 10lb bags of chicken leg quarters, courtesy of the local Food Pantry, lovely, red bag(lower shelf) and Yellow/Clear bag(top shelf under the bread).
At least I have a box of shake and bake for the chicken.

And the worst tasting Grapefruit unsweetened Juice ever...
Two packets of sweet and low per glass, don't make this stuff drinkable, YUCK...

Why don't they sell ready-made butterscotch cookie dough? All I ever see is chocolate chip, peanut butter, and sugar cookie.

Me I have some plain white rice, I think about 6lbs(in 3 two pound bags) to try and make into something tasty, or at least edible, all have directions, only the latest one has directions for the microwave oven, this one I'll cook last, since it has the microwave directions on the bag(see the 2nd pic).

Besides Margarine, DHMO and maybe pepper(on the plate, I'm not including salt, salt is not part of My diet), I might see about buying some yellow saffron to add to the rice, it always looks interesting, of course I have no idea how much to add and would have to wait until the 1st of the month.

The directions, in the original they are fully readable, taken with My camera in My smart phone.

Pudding is ok, I hadn't thought of that, I looked up several recipes, of course I'm short of some of the ingredients at the moment, all I can do is wait.

Ingredients that I lack:
Milk
White sugar
Vanilla Extract
Raisins(I could substitute Cranberry Raisins possibly, I've got loads of that)

Ingredients that I have:
Eggs(powdered)
Salt(optional I'd think)
Margarine(No butter here)

As you have chicken, rice and mixed veg, make a stir fry. Do you have any soya sauce and sesame oil.


Defrost mixed veg, about 3 oz per potion.
Make some scrambled egg from you dried egg, equivalent of one eggs worth per two portions.
Cook some rice, you need about 1 cup cooked rice per portion.
Remove chicken meat from bone, about 3 to 4 ozs per portion.
Marinate chicken in soya sauce and sesame oil for 10 mins, 1 tablespoon of each per 2 portions.

Chop up a small onion, enough for 2 portions.
Cook the chicken in a large skillet until cooked through, about 4 mins.
Remove chicken from skillet on to a plate.
Add two table spoons of veg oil to skillet and warm.
Cook the onion until clear, about 3 minutes.
Add the drained mixed veg, and cook for another minute.
Now add the cooked rice, and heat through, about 3 mins, if rice was cooked earlier and had cooled.

(Make a well in the middle and add fresh egg and scramble, break apart when cooked and then mix everything together)

Add the scrambled egg and the chicken, season as required, and cook through until everything is hot.
Serve onto plate(s) and eat.

P.S. Get a rice steamer. ~$15 from walmart, will probably come with recipe book. If not get them from amazon.

P.P.S. Next time you buy chicken get breast, or thigh. The reason drumsticks and wings are so cheap it is because there is very little meat and lots of bone and skin.

The chicken is leg quarters, that came from a local food pantry, 20lbs worth, in two 10 pound bags, cost $0.00, I need to cut them up, then use the box of shake and bake that I have, but I need to buy a cutting board in April(I hope I can) and I need to use My serrated kitchen knife.

I don't know if one box of shake and bake will cover 20lbs of chicken or not, it's been years since I used shake and bake.

Soya oil and sesame oil, nope.

Since I do have cooking instructions for cooking the rice in the microwave, I'll do that, since I have two ceramic cooking pans w/glass lids. But then the directions are on the bag. And I have all the ingredients for that, water, margarine and rice. But I'm waiting on the rice, until I can get the plastic cutting boards.
