I have been using seti@home for about 2 or 3 weeks now, and have about 480 credits. What I'd like to know is what are they used for and how?

They are just for fun. It's just a meter of how much work you've done.

There is however a BOINC project in the pre-alpha stage that is actually using them for something. It's a project that renders 3D graphics. As you process for the project, you get 'spendable cobblestones' that you can in turn, cash in towards processing time for your own 3D project. :)
