Do any of you single people have special "recipes" you've developed so that you can eat something good without going to a lot of trouble? I'll give you one of my examples. I buy frozen chicken patties, marinara sauce, and shredded mozarella cheese to make "chicken parmesan." I put a frozen patty on a plate and cook it half way using the microwave oven. I then take it out and flip it over. I spread about 1-2 tablespoons of marinara sauce on the top and finish by sprinkling a generous amount of the shredded mozarella on top of the sauce. I then put it back in the microwave and finish cooking (until the cheese is nicely melted). Add a salad and a glass of wine and you've got a meal! I've thought about using a frozen, fully-cooked chicken breast for this instead of the patty, but haven't tried that yet. ~Sue~ |

Im on second shift and Im tired of all the canned crap ive been eating for a quick meal. I do like the frozen steakums. I improvised a lighter meal for myself tonight than I usually do. Fried a frozen tilapia filet in butter, added some cheese, and cooked a package of ramen noodles. Didn't even do dessert. I improvised a lighter meal for myself tonight than I usually do. Might want to reconsider the tilapia, if you google tilapia on the first page you get titles like "tilapia is worse than bacon". Not sue the butter or cheese is a good idea also. I usually use olive oil, and if taste needs enhancing use herbs or spices, sometimes sprinkle with flaked nuts. |

Quick dinner for one when Eric has to work super late - saute up whatever vegetables are in the fridge and serve with a side of cheese melted on toast - glass of wine advised. |

I know I should skip the cheese, but I can't help it; I don't like fish that much. Don't like olive oil. I'm not convinced butter is really any worse anyway. If I do need oil, I use canola. They all pretty much taste the same - salty. ;~} I don't have the pan to cook on the stove, not reliably at least, that mainly adds heat to the house, I just smash it in the bag without rupturing the bag, empty both bags into the cup & add water. The cup is one that I own, I tried saran wrap, that lasted for a short time, I need a rubber band of the right size if and when I do that again. I quit eating canned tuna a long time ago. I don't even remember why, but knowing myself, it may have had something to do with dolphins being caught and killed during the tuna-fishing process. Now I used canned chicken if I want something like a "tuna" sandwich, or "tuna" casserole. But now we've heard that chicken sold in the US contains arsenic. Seems there's a downside to nearly everything we eat. ~Sue~ |
