Is it possible to change the disk on which BOINC operates and if so how?

If not then is it planned?

It would maybe be an idea to be able to choose a seperate disk for each project.

You cannot tell Boinc to use another harddrive for its crunching only, no. But you can tell Boinc upon installation to be installed on another harddrive than C:

When you're at the Destination screen, just click on the Change button and tell Boinc where to install to. Mine is housing on its own partition on a second harddrive, called E:

Since Boinc is only storing the files and work units on the harddrive, why do you want seperate drives for each project? The science apps only use your CPU, RAM and page file for crunching and temp storing of themselves. So I don't see the point in having an option to store projects on different drives. Explain?
