Hey ya'll (Southern for You All),

I thought it might be cool is we had a place to share low carb recipes.

Mind you I am not condoning Atkin's or the South Park Diet Plans, but they do have some merits. As a Type II Diabetic it is in my best interest to keep the carbs low. However, there is a certain quality of life that I am used too.

I love good spicey foods, foods from other countries. I just don't see a reason why low carb foods can not delicious. Most of the boxed up, or packaged low carb food are not tasty at all.

I modified a carrot souffle' recipe I got off the web and exchanged all the high carb ingredients with low carb/glycemic equivilants and I was right proud that nobody knew the difference. I just did the same with Blueberry Bran muffins..

If this is of any interest to ya'll lets get this thread moving.. I'll post both recipes here if you'd like.

I worked out a Crustless Pizza. It's all the toppings I like (cheese, sausage, onions, olives etc.) cooked in a low caserole dish. If you pack the dish right, the "slices" come out pretty well, but you still have to eat it with a fork and knife. Is this what you mean? I can post the recipe if you are interested.

Yes.. Even better if you made a low glycemic crust for that pizza..

NEW TERM: Low Glycemic

Some foods are high carb but low glycemic.. which means the carbs they contain has little or no affect on the normal blood sugar level. Sweet Potatoes have more carbs then a normal white potato; however, the sweet potato has a lower glycemic rating..

The body stores fat as fat and excess sugar as fat. Eating foods lower in glycemic effects lets the body use up the available sugar and not have to store it. This is actually the merits of the low carb diets. The cons are they tend to pormote high Proteins.. High Proteins can lead to high fat etc etc..

Yes ye crustless pizza is a good example..

Actually I have moved up to the hard stuff hahahaha Seriously a shot of Jamaican Rum or Jack Daniels has zero carbs.. The frementing process eats up all the available sugar.. Fun fact Rum is made from Sugar Cane..

Bad fact while the body is metabolizing the alchohol it can not metabolizes the sugar. This leaves the serum glucose levels too high for the amount of available insulin to use it.. This is why it's not good for a diabetic to drink since diabetics have little or no insulin in the first place.

Red Wines have about 4 gm per glass Whites have 5-6gms per glass.

Beers are so high in carbs because the fermenting process can not eat up all the cards produced by the barley, hops and yeast. Beers like Michelob Ultra cut down on the amounts of Barley and Hops they add to the mix..

around 140, I cut out sugar in my diet (mostly in my coffee).

I test dailey, at a level of 106, Just cutting out the sugar
in my coffee! I am already on a low salt, Low carb, not fat,
tastless diet, I use alot of spices and herbs for tast, Boneless
Chicken Breast is my main meat! Theres more but I won't bore you with it!

You didn't actually think I would give up on Spaghetti did ya??

I make my own pasta with real Durham Semolina.. High Carb, but low Glycemic..
and I get to subtract the fiber..

Tim when I was diagnosed my BG was 188, A1C's were above 8% and my Triglycerides where above 400..

My avg. BG level is now in the 90's, A1C well below 7% and Triglycerides are below 126..

My diet is anything but bland.. In fact I am sittinghere smelling the home made spaghetti sauce I made that should top out at about 4-5GM per 1/2 cup.
